How many steaks per package? Most people choose the number of people that will be eating them.
How thick would you like the steaks to be? 3/4" is standard but we can cut them from 5/8" to 1 1/2"
Would you like roasts? How large would you like them to be? Roast size is usually determined by the number of people that will be eating it. A good rule is 1/2 lb for each adult person. Some people choose to have them ground into burger or sausage.
Do you prefer burger or sausage. If sausage which flavor? Mild, Medium, or Spicy This determines the amount of spice put into the sausage. Spicy does not mean hot ... only that there are more spices.
Would you like beef or pork trim added to your burger or Sausage? If so what percentage? Addition of trim halps to take away some of the gaminess of meat. People that choose this normally put 10-25% trim in their burger.
Would you like beef or pork fat added to your burger or Sausage? If so what percentage? Beef and pork fat is also used to take away some of the gaminess of wild meat. Fat has the added benefit of keeping the meat more moist. People who choose this option normally choose 10-15%.
Would you like any jerky? If so how much and which flavor(s) On deer and Antelope we can only do extruded jerky. On Elk and Moose we can do both. Slab jerky will take away from any roasts you may want. Jerky is $5.00 per lb wet weight with a 5 lb minimum per flavor. Flavors are listed below.
Would you like any Salami\Summer Sausage? Our product isn't hard like salami, but is in a casing. It is more similiar to Summer Sausage than Salami. It is $5.00 per lb wet weight with a 5 lb minimum.
